Valentina's Spaghetti Squash Fritters - Latina Style

 

My Fritters are a spin from the video below with a latin infusion:

One whole Spaghetti Squash (Roasted for 35 mins at 400 degrees)
Flour, 2 Eggs, One white onion, Two cloves of garlic, Cilantro, Lactose-Free Shredded Cheese, Black Pepper, Tropical Spices, pinch of sea salt (all in a bowl, dry ingredients first)

I flipped my fritters once 40 mins at 350 degrees

Fall, we made it, now add some Pumpkin loving recipes

My favorite time of year has arrived FALL. I’m in a new location, I actually see red & orange leaves on trees, not the fake leaves decor I have around the house. I actually can literally go crazy  in the kitchen with my favorite fruit: the pumpkin.

When I drive, do homework, anytime I’m outdoors in this great Fall beauty, I think of what I can do with a pumpkin. I was brainstorming and researching online for some recipes. This year I want to be adventurous, I want to mix it, add, incorporate pumpkin with latin flair maybe pumpkin and refried beans? I saw that the Spicy Queen did a Caramel Pumpkin Parfait (that had a spicy kick to it). Watch out, here I come with some Pumpkin Loving!

Intensity Academy (Sauces) at Pepper Fest 2011

I had the pleasure of meeting founder of Intensity Academy at Pepper Fest 2011 in Pinellas Park, FL. Michele Northrup has been in business as the “Saucy Queen” since 2007. While I was in the middle of devouring her sauces, I believe I heard her say that her ketchup was voted #1 in the nation thru the Scovie Awards and even Paula Deen has tried it! Her Garlic Goodness sauce requires (I heard) about 100 lb of Garlic for every 50 gallons!

My favorite is the Chai Thai Teriyaki Sauce that is finger-licking good with meatballs (and by adding some Apricot Jam with it). I had the pleasure of first enjoying her Chai Thai meatballs at a Crave – Tampa Bay party where Michelle is featured in the book. (The “Crave” book features the top female businesses in the area, in this case in the Tampa Bay area). Click here for more information on Crave I’m glad I was given a sample for me to enjoy at home!

She was “born in Peru, raised in Miami, but developed her southern charm in North Carolina”! Yummy stuff, I loved the Pecan and Chocolate Dulce De Leche.

Valentina’s Pumpkin Enchilada

I used fire roasted peppers that my cuban grandma-in-law made me, pumpkin, Cento tomato sauce, one onion, three garlic cloves, Pampered Chef Chipotle spice, Cheddar cheese (no lactose, cholesterol, gluten).

Oh no no, it’s not Chocolate Rice, it’s Black Rice!

I just made some black rice, apart from the fact that it is pretty healthy (click here for benefits), it has an amazing taste! I needed something to add to my Indian (take-out) leftovers from yesterday (Sunday is no cook day for me). Great choice!
